Lemon Bars

Hobby of the Day: Baking
Continuing on through the Martha Cookbooks T and I decided to bake lemon squares- she was my pastry chef. If you have never had them before, they are "heaven." My opinion of course. If you don't like something tart then they might not be your "cup o tea."

I love them, there's something about them. They aren't overly sweet, perhaps it's that tartness and they have a great yummy buttery bottom.  They are rich and dense.  It's a pretty simple recipe as Martha's recipes go.  I should have picked something harder since I had a helper, but "c'est la vie."

I had all the ingredients except for whole milk and a lot of lemon juice.  I usually always have lemon juice, but I didn't have enough for 3/4. Again keep in mind they are called LEMON squares for a reason.  I didn't use real lemons, I'm sure Martha does, I instead used the cute little lemon shaped bottles from the grocery store. 


One thing that it does require is that you freeze the cookie like bottom before you bake it. I always worry about moving a glass dish in a freezing environment to a hot oven, sometimes disaster occurs.  
Recipe: page 266
for the crust:
3/4 cup unsalted butter, frozen plus 
more for the dish
1 3/4 cups all-purpose flour
3/4 cup confectioners' sugar
3/4 teaspoon coarse salt

for the filling:
4 large eggs, lightly beaten
1 1/3 cups granulated sugar
3 tablespoons all-purpose flour
1/4 teaspoon coarse salt
3/4 cup fresh lemon juice
1/4 cup whole milk
 Confectioners' sugar for dusting


Directions:
1. Preheat oven to 350 degrees. Butter a 9x13 -inch glass baking dish, a line with parchment
2. Make crust: Grate butter on a cheese grater with large holes; set aside. Whisk together flour, confectioners' sugar, and salt in a large bowl. Add butter; stir with a wooden spoon until combined and mixture looks crumbly

3. Transfer mixture to prepared dish; press evenly onto bottom with your hands. Freeze crust 15 minutes. Bake until slightly golden, 16-18 minutes. Leave oven on.
4. Meanwhile, make filling: Whisk together eggs, granulated sugar, flour, and salt in a bowl until smooth. Stir in lemon juice and milk. Pour over hot crust.


 Love Kosher salt!
 
 I used to drink this and now I shudder to think what it would taste like

5. Reduce oven temperature to 325 degrees, and bake until filling is set and edges are slightly golden brown, about 18 minutes. Let cool slight on a wire rack. Lift out; let cool completely on a wire race before cutting into 2-inch squares. Dust with confectioners' sugar. Lemon squares can be refrigerated in airtight containers up to 2 days. 
** I froze them so I could keep them longer. They also taste great with whipped cream if you like that.

Besties Weekend Part 1

This past weekend I was blessed to have my two best friends come and visit.

My one bestie, Teresa, came in on Wednesday and my other bestie, Meg, came in Friday afternoon. Both of these girls were in my wedding and I have known them for like EVER and they mean the world to me!  I wish that we lived closer together, but am thankful for all the times that we do get to spend together. Because Teresa came so early it meant that she would get to come into my school and meet my kiddos and help out and also teach a lesson!  So exciting! 
Gary made dinner for us Wednesday night, grilled chicken and avocado lettuce wraps (my idea) with a side of quinoa- my new favorite food! Then T and I went off to step class.  We sweated and stepped and "Around the Worlded."


Thursday T and I went to school and she hopefully enjoyed it. I hope that I looked the part of a good teacher. LOL.  T is a dietitian and so she taught the kiddos a nutrition lesson.  Apparently the food pyramid is no longer in use, it is now myplate.gov.  She read the story, Vegetable Soup, by Lois Ehlert and then we made a nutritious snack. We called it, "Eating a Rainbow." Not to get mistaken with the skittles commercial "Taste the Rainbow." T had pre-bagged up, chopped red peppers, carrots, corn, cucumber and chopped red cabbage.  We spread cream cheese on whole wheat wraps and then gave each student a task, to add salt, pepper, Italian spices and veggies.  Then we rolled it all up- RAINBOW! Some of my kiddos loved it, some didn't like it, but at least they tried it which was the important part. Some asked for seconds. I know that it made T happy and I was so pleased with their behavior and willingness to try!

We came home and just chilaxed and talked- something the two of us are great at.  Then we went to a Tupperware party at my good friend Jenna's house. I know what you're thinking, Tupperware? But really it's not the same as it used to be. There are fun bright colors and you can cook in a lot of them and they have a lifetime guarantee.  We got play money for different things that we did, which we could use to buy auctioned off freebies at the end. You know teacher's love freebies! Tupperware is not cheap stuff, but neither is Pampered Chef, but at least they have some good deals.  I purchased the yellow topped vegetable and fruit containers that help to lengthen the life of my products so that they don't go to waste.  It was a lot of fun. Jenna was the hostess with the "mostess." She served wine, cheese, crackers, veggies and strawberries. And for those of you who read me, You know I LOVE cheese!

Friday- I took off from work and T and I ran some errands, picked up t-shirts and materials to make shirts for the 5K run on Sunday.  Then we went to lunch at Shawafel down on H street. So yummy. I got my usually, spit roasted chicken with coleslaw, garlic toum, french fries and pickles.  The fries are on the wrap, if you haven't been, GO! 

Meg arrived at 5:30 so we went to pick her up.  Then we hung out before dinner and then walked down to H street again and Gary went to Shawafel and us girlies went to Rita's Water Ice.....Gelati? Yes Please!

Cookie Time!

Hobby of the Day:  Baking

I promised I would try to make my way through both the Martha Stewart Cupcake book and Cookie book.  This might take me a few years people.  I didn't realize how MANY cookies Martha has crammed into her cookbook.  

Cookie: Chocolate Crackles pg. 68

Recipe
8 ounces bittersweet chocolate finally chopped (in list husband to chop)
1 1/4 cups all-purpose flour
1/2 cup unsweetened Dutch process cocoa powder
2 teaspoons baking powder
1/4 teaspoon coarse salt
1/2 cup (1 stick) unsalted butter, room temperature
1 1/2 cups packed light brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1/3 cup whole milk (I used 1% because that's what I had)
1 cup granulated sugar
1 cup confectioners sugar

Directions:
1. Melt chocolate in a heatproof bowl set over a pan on simmering water, stirring.  Set aside and let cool. Sift together flour, cocoa powder, baking powder, and salt in a bowl.

 I have a double boiler which makes it pretty easy, but you don't have to have one obviously.
2. With an electric mixer, beat butter and brown sugar on a medium speed until pale and fluffy, 2-3 minutes. Mix in eggs and vanilla, and then melted chocolate. Reduce speed to low; mix in flour mixture in two batches, alternating with the milk. Divide dough into four equal pieces. Wrap each in plastic; refrigerate until firm, about 2 hours.

3. Preheat oven to 350 degrees.  Divide each piece into sixteen 1-inch balls. Roll in granulated sugar to coat, then in confectioners' sugar to coat. Space 2 inches apart on baking sheets lined with parchment paper. (If you don't have, just spray baking sheet)

4. Bake until surfaces crack, about 14 minutes, rotating sheets halfway through.  Let cool on wire rack.  Cookies can be stored between layers of parchment in airtight containers at room temperature up to 3 days. (mine didn't last that long. Thankfully we had guests for the weekend and they all disappeared!)
Voila!
I froze the left over dough, that way I can have cookies anytime.

Sweet Confections!

Hobby of the day: Baking

I have decided that I am going to attempt to work through both the Martha Stewart Cupcake Cookbook as well as the Cookie Cookbook. However, I will NOT be doing it everyday. I have neither the time, nor the energy, or the money for that matter.  Thankfully both Gary and I are teachers and have students who would love to consume goodies, as well as co-workers.  Unfortunately, the summer is coming, good thing, I have more time, bad thing, who will eat them?! 
Thus begins my challenge. My goal: to bake 2-4 times a month.

I made these sweet treats for my grandmother's birthday this past weekend.  She can't really have chocolate, so..... I made Yellow Buttermilk Cupcakes, pg. 26 in the cupcake cookbook.  I topped them with a vanilla butter cream recipe that I got from here.

Recipe: 
3 cups cake flour (not self-rising)
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
2 1/4 teaspoons baking powder
1 1/2 teaspoons coarse salt
1 cup plus 2 tablespoons of unsalted butter (room temperature)
2 1/4 cups sugar
5 large whole eggs plus 3 egg yolks- room temperature
2 cups buttermilk- room temperature (** if you can't find buttermilk you can make your own, crazy I know it's really simple 1 cup of milk to 1 tablespoon lemon juice of white vinegar)
2 teaspoons pure vanilla extract


Directions:
1. Preheat oven to 350. Line standard muffin tins with cupcake liners. Sift together both flours, baking soda, baking powder and salt.

2. With an electric mixer on medium-high speed, cream butter and sugar until pale and fluffy.  Reduce speed to medium.  Add whole eggs, one at a time, beating until thoroughly combined.  Reduce speed to low.  Add flour mixture in three batches, alternating with two additions of buttermilk, and beating until combined after each. Beat in vanilla.

3. Divide batter evenly among lined cups, filling each three-quarters full. Bake, rotating tins halfway through, until cupcakes spring back when lightly touched and a cake tester inserted into the center comes out clean, about 20 minutes (I did 18 and it was fine, I also forgot to rotate- I did less time because I like my cupcakes to stay moist) Transfer to wire racks to cool 10 minutes; turn out cupakes onto racks and let cook completely. Cupcakes can be stored overnight at room temperature, or frozen up to 2 months, in airtight containers.


On to the icing: For Christmas my mom gave me a great icing tip set, most of which I have yet to use.  I wanted to make the tops of the cupcakes extra special, go that extra mile. Enter Youtube......


It took me probably 1-2 hours to make the roses.  I had never ever made icing roses before, so it took me awhile to perfect them. Then transfer them to the cupcake and add the leaves. I tried to make my leaves like the guy on the video, but then I discovered I had leaf icing tips. I still can't figure out how to get my leaves to be fully pointy, but practice makes perfect/  


My grandmother has always had a green thumb. So I made, her own edible garden.  I really wanted to make more than roses, but when all was said and done, with coloring and filling bags and finding the right tips.... I didn't have the time or energy.  Until the next time....

Sweet Treats!

Hobby of the Day: Baking!

The PTA (parent/teacher association) at my school is having a bake sale.  Tomorrow evening our older students are having a spring concert and therefore the PTA thought it would be a nice idea to sell some delicious treats.  I'm all for that.  So I signed up, seeing that baking is one of my favorite past time hobbies. If ingredients weren't so dang expensive I would do it A LOT more than I currently do. Plus, since I gave up sweets for lent it makes baking really hard!
What did I bake?
Mini oreo cheesecake cupcakes and of course, chocolate chip cookies! It was very hard for me not to eat a few bites...I know I know, salmonella.
 My new cookie sheet, it works SOOO much better than my old ones. 
Enter Mini oreo cheesecakes- Gary's not on a sweet lent diet so he was able to partake in the goodness that is. Yes, thank you Martha Stewart!

Baking at 275 degrees for 22 min, rotating at the half
Cooling in the in fridge....note my favorite Naked Juice and Ragu pasta sauce
Recipe: Thanks to good old Martha Stewart and her cupcake book! LOVE IT!
Ingredients
  • 42 cream-filled chocolate sandwich cookies, such as Oreos, 30 whole and 12 coarsely chopped
  • 2 lbs cream cheese (or 4 8oz boxes) room temperature
  • 1 c. sugar
  • 1 tsp. pure vanilla extract
  • 4 large eggs, room temperature, lightly beaten
  • 1 c. sour cream
  • pinch of salt
1. Preheat oven to 275 degrees F. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.
2. With an electric mixer on medium-high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat until combined. Beat in vanilla.
3. Drizzle in eggs, a big at a time, beating to combine and scraping down sides of bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.
4. Divide batter evenly (I use a 3 tbs. cookie scoop) among cookie-filled cups, filling each almost to the top. Bake, rotating tins halfway through, until filling is set, about 22 minutes.  Transfer tins to wire racks to cool completely.  Refrigerate (in tins) at least 4 hours, or overnight before serving.

Christmas Cookie Exchange

Every year the book club that I am in has a Christmas party at the host of the month's house.  The Christmas party fell on my month. Score!  I didn't have to pick any books since we all bring a wrapped book to exchange and or steal.  This year I also included a cookie exchange.  As we know, baking is a huge hobby of mine.

A cookie exchange is where everyone brings their favorite cookie, several dozen and then we all get to choose from the variety an deliciousness and walk a bunch of new cookies. Let's just say, we all know why we make New Year's Resolutions. Christmas is not a very forgiving holiday.

I made white chocolate chocolate cookies:

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups white sugar ( I used half white and half brown sugar)
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.


A friend made amazingly delicious thumb print cookies!!! I could eat them for breakfast, oh wait, I  did. :-)  Easy Recipe

Ingrediants:                                               
Thumb Print Cookies
1 cup butter, softened
2/3 cup sugar
1 - 1.5 teaspoon almond or vanilla extract
2 cups all-purpose sifted flour
Jam of your choice
2 cups (or more chopped walnuts)

Directions

1. Cream butter and sugar. Beat in extract.

2. Sift Flour. Gradually add flour until dough forms a ball.

3. Cover and freeze for 30 minutes. Remove from freezer and refrigerate for 30 minutes.

4. Roll into 1-in. balls. Roll in walnut mixture. Place 1 in. apart on ungreased baking sheets. Make an indentation in the center wtih your thumb. Dont flatten them at all as the jam will leak out. Fill with jam.

5. Bake at 350 degrees F for 15-18 minutes or until edges are lightly browned. Remove to wire racks to cool.
